Peanut Butter Banana Cups

This desert is simple, healthy and perfect for when you are craving something sweet!! Each bite contains nothing but dark chocolate, which is lower in sugar than milk chocolate and rich in flavonoids, peanut butter for protein, banana for a heaping dose of antioxidants.


Ingredients:
  • 3/4 cup dark chocolate chips
  • 1 medium banana, peeled sliced into 16 rounds
  • 1/4 cup peanut butter
  • 1 tablespoon melted coconut oil (or butter if you don't have oil)
  • Coconut flakes (optional)
  • 16 (1.25 inch) baking cups


Directions

  1. Melt chocolate in a double-broiler or in a small sauce pan over low heat. Allow to cool slightly. In the meantime, combine melted coconut oil (or butter) and peanut butter
  2. Add approximately 1 teaspoon melted chocolate chip to bottom of each baking cup. Followed by one banana slice, 1 teaspoon peanut butter mixture, and lastly drop about 1/2 teaspoon melted chocolate in the center of each cup. Sprinkle with coconut flakes if desired. 
  3. Place cups in freezer safe dish or cookie sheet. Place in freezer until set approximately 1 hour.
(when I made these didn't have the small baking cups only the larger ones. the presentation isn't as good lol)
