Cucumber, Chickpea, and Pita Salad
This is a fresh and simple salad that is made with cucumber, chickpeas, pita chips, feta cheese, dill, and a light lemon dressing.
If you're skeptical about the chips in the salad, don’t be. Trust me on this one! They are kind of like the croutons. They add the perfect crunch. If you are going to make the salad in advance, don’t add the pita chips until you are ready to serve. You don’t want them to get soggy. The rest of the salad can be made up to a day in advance, just keep it in the fridge.
You can serve this Cucumber, Chickpea, and Pita Salad as a side dish, it goes great with any meal, or it can be your meal! It is light, refreshing, and TASTY!
Ingredients:
For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons white-wine vinegar
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- Salt and black pepper, to taste
- 2 medium cucumbers, peeled, and cut into 1/2-inch pieces
- 1 (15 oz) can chickpeas, rinsed and drained
- 2 green onions, chopped
- 2 tablespoons finely chopped fresh dill
- 1/2 cup crumbled feta cheese
- 1 cup pita chips, broken into bite size pieces
- Salt and black pepper, to taste
Directions:
1. In a small bowl, whisk together olive oil, vinegar, lemon juice, garlic, salt, and pepper. Set aside.
2. In a medium salad bowl, cucumber, chickpeas, green onion, dill, feta cheese, and pita chips. Drizzle dressing over salad and gently toss. Season with salt and pepper, to taste. Serve.
Note-if cucumber seeds bug you, you can remove the seeds or buy seedless cucumbers.
