If you love a McDonald's Big Mac you will love this salad. Tastes just like a Big Mac, but healthier. Low carb, gluten free, and sugar free (if using powdered erythritol) 

Ingredients:

Salad:
1lb Ground Beef
1 tsp Sea Salt
1/4 tsp Black Pepper
8 oz Romaine or Iceberg Lettuce
1 cup Tomatoes
1 cup Shredded Cheddar Cheese
1/2 cup Pickles (diced)

Dressing:
1/2 cup Mayonnaise
2 tbsp Diced Pickles
2 tsp Mustard
1 tsp White Vinegar
1/2 Smoked Paprika
1 1/2 Powdered Erythritol or sugar (adjust to taste)

Instructions:

1. Cook ground beef in skillet over high heat until brown. Season with salt and pepper. Drain any grease.

2. Puree all dressing ingredients in a blender. If dressing is thicker than you like, thin out with small amounts of water or oil in small amounts until desired consistency. Refrigerate until ready to serve.

3. Combine all salad ingredients including ground beef. Toss with dressing.

INGREDIENTS

  • 1 1/2 pounds chicken breasts
  • sea salt and black pepper, to taste
  • 5 tablespoons butter, divided
  • 1 medium onion, thinly sliced
  • ½ cup chicken stock
  • 1 cup heavy cream
  • 2 tablespoons balsamic vinegar
  • 8 ounces cremini mushrooms, halved
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh flat-leaf parsley

DIRECTION

1. Lightly season the chicken breasts with sea salt and black pepper on both sides. In a large sauté pan over medium-low heat, add 2 tablespoons of the butter and the onions. Cook until the onions are nice and caramelized, about 20 minutes. Remove the pan from the heat and set aside. In a separate pan, over medium-high heat, pan-sear the chicken breasts in the remaining 3 tablespoons of butter. Brown the chicken on both sides and then remove from pan and set aside. (Chicken will not be fully cooking during this stage)

2. De-glaze the pan with chicken stock. Using a rubber spatula, scrape the pan and mix in any remaining bits of chicken. Let simmer for 5 minutes.

3. Reduce the heat to low, add the heavy cream, balsamic vinegar, mushrooms and a little sea salt and black pepper. Let simmer for 10 minutes.

4. Add the chicken breasts back to the sauce pan, and simmer until the chicken is cooked all the way through, about 12 minutes

5. Remove the chicken breasts from the pan and plate. Add the Parmesan cheese and caramelized onions to the sauce and stir until the cheese is melted into the sauce. Pour the sauce over top of chicken.

6. Garnish with fresh parsley, if using.

A low carb meatball with all of the flavors and textures of the classic Chinese takeout favorite!

Approx nutrition info per serving: 322 calories, 25g fat, 3.75g net carbs, 23g protein

INGREDIENTS

FOR THE MEATBALLS
1 lb ground turkey or chicken
2 Tbl minced ginger
1/4 cup scallions, chopped
1 tsp garlic powder
1/4 cup almond flour
1 egg
light flavored oil for frying (olive, grapeseed, etc)

FOR THE SAUCE
1/2 tsp sesame oil
3 Tbl rice wine vinegar (unseasoned – sugar free)
3 Tbl soy sauce (tamari based for GF, or coconut aminos for Paleo)
1/4 cup water
3 Tbl sugar substitute (honey for Paleo)
1/2 tsp xanthan gum (or arrowroot powder)
1/4 cup scallions, chopped
4 – 5 small dried chilies, seeded and chopped

TO MAKE THE MEATBALLS:
Combine all of the meatball ingredients and mix thoroughly. Form into 16 balls and saute/fry in oil over medium heat until cooked through and crispy. Alternatively you could bake them but they won’t get the crunchy exterior.

TO MAKE THE SAUCE:
Combine the sesame oil, vinegar, GF soy sauce, water, sugar substitute, and xanthan gum in a small saucepan and whisk until combined. Add the scallions and chili pepper and bring to a boil. Simmer for five minutes until thickened and remove from heat.

TO SERVE:
Add the cooked meatballs to the thickened sauce and stir to coat. Garnish with more chopped scallions and chilis if desired.




**To lower the fat and calories, use extra lean ground turkey, and bake rather than fry them.

Love spice, bacon, and cheese? Well look no further... One of my favorite snacks all in one..

Ingredients

  • 16 fresh jalapeños
  • 16 strips bacon
  • 8 oz cream cheese
  • 1/2 cup shredded cheddar cheese
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp cumin (optional)
  • 1 tsp chili powder (optional)

Instructions


  1. Preheat oven to 350° F
  2. Slice the bacon in half (this will give you 16 half length pieces).
  3. Slice the ends off each jalapeno. Slice each jalapeno in half length-wise. Remove seeds and membranes with a corer or knife. (Caution: use gloves to protect hands)
  4. Mix the cream cheese, optional spices, and cheddar cheese together in a bowl.
  5. Fill each jalapeno half with the cheese mix. (You can either place two halves back together or keep them separate. We prefer separate!)
  6. Wrap each piece in bacon.
  7. Place all bacon-wrapped jalapeno poppers on a baking sheet lined with aluminum foil. Make sure there is a bit of room between each piece. Bake for 20-25 minutes (until bacon is baked and jalapenos are desired spiciness).
  8. Important: Do a taste test with one popper to measure the spiciness. The longer you bake the poppers, the less hot they become.
  9. Add salt, paprika and any other spices to taste. Enjoy!

    This dish is the bomb and big hit in my house... Who knew something so yummy is healthy for you.. If you follow the keto diet you will want to try this!





    Ingredients:
    •2 tablespoons butter (or coconut oil if dairy free)
    •1 cup diced celery
    •1 large onion
    •3 cloves garlic ( I used 2 tsp minced garlic from jar)
    •4 boneless chicken cubed
    •1 teaspoon salt
    •1 teaspoon pepper
    •4 cups cauliflower florets cut into 1/2 inch pieces
    •2 tablespoons buffalo wing sauce ( or other med-hot hot sauce, or add more to taste)
    •8 ounces cream cheese
    •3 tablespoons chicken broth
    •1/2 cup crumble blue cheese (optional)
    •1/2 cup shredded cheese (optional)


    Directions:
    1.Pre-heat oven to 350° F

    2. Melt butter in large skillet. Add celery, onion, garlic, chicken. Cook until chicken is done.

    3. Add cauliflower, salt, pepper, broth, cream cheese. Stir until cream cheese is smoothed and mixture is creamy. Then add hot sauce to mixture and stir well. Top the skillet with blue cheese and shredded cheese . Transfer skillet to oven and bake uncovered for 20 minutes or until cauliflower is soft. Remove from heat and serve with celery sticks


    Note: if you don’t have a large enough skillet use medium to large pot and transfer to a casserole dish. Then top with blue cheese and shredded cheese and bake.
